South Indian Veg Biriyani - How to make Vegetable Biriyani

 South Indian Style Vegetable Biriyani

        Biriyani, a meal that we never get bored off. I'm a kind of person for tasting variety of biriyani and eager to know about that. With that curiosity, here I have shared a simple vegetable biriyani for those who are in very basic level of cooking.


                                                 

Ingredients Required 

Seasoning:

  • Oil - 3 to 4 tablespoon
  • Ghee - 3 to 4 tablespoon
  • Cardamom - 2 to 3
  • Cinamon - 2 pieces
  • Cloves - 4 to 5
  • Bay Leaf - 1
  • Star Anise - 1
  • Kalpasi - 2 to 3

Vegetables:

  • Onion - 3 (medium size)
  • Tomato - 4 (medium size)
  • vegetables - beans, carrot, peas, cauliflower, potato etc.
  • Green chillies - 3 to 4
  • Mint leaves - handful
  • Coriander leaves - handful
  • Curd - half cup
  • Lemon juice - half
  • Coconut paste - 1 cup
  • Rice - 2 cup

Masala

  • Ginger garlic paste - 2 tablespoon
  • Chilli Powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Jeera Powder - 1/2 teaspoon
  • Biriyani Masala or Garam Masala - 1 teaspoon
  • Turmeric Powder - 1/2 teaspoon

Making Process of Vegetable Biriyani

Step 1: Add oil and ghee in pressure cooker.



Step 2: When the oil becomes heat, add seasoning ingredients.



Step 3: Wait a while, and add onion.



Step 4: Saute well, till its becomes pinkish golden brown color.

Step 5: Add ginger garlic paste and stir fry until you feel the nice aroma of it.



Step 6: Then, put all the vegetables you have chosen.



Step 7: Stir fry for a minute and add chopped tomatoes.



Step 8: Once it is mashed, add a bunch of mint and coriander leaves.



Step 9: Finally, sprinkle add all the masalas and wait till the oil separates.



Step 10: For making the rice to a soft texture, add half cup of curd and lemon.



Step 11: Mix it well, add water and coconut paste. If you take basmati rice, add one and half cup water for 1 cup of rice. I have taken normal boiled rice (2 cup water for 1 cup of rice).



Step 12: After boiling taste the water, it would be little more salty.

Step 13: At this time, pressure cook it upto 2 whistles (One whistle for basmati rice)

Step 14: When the pressure released, your south Indian style vegetable biriyani is ready to serve.
